Pistachio Crusted Salmon

Introduction

This salmon is my go-to! It’s simple and quick to prepare, and honestly, any nut-encrusted fish is my fave. The nuttiness and texture the pistachios bring to the recipe are amazing. The tanginess of the lemon paired with a touch of sweetness complements the salmon perfectly. I added lemon zest for extra zestiness, which really brightens the flavors.

About The Recipe

Ingredients

  • 4 salmon fillets

  • 1 cup shelled pistachios, finely chopped

  • 2 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tsp lemon zest

  • Salt and pepper to taste



Preparation

  1. Preheat oven to 400°F (200°C).

  2. Mix Dijon mustard, honey, olive oil, lemon juice, garlic, and lemon zest.

  3. Brush the mixture over the salmon fillets.

  4. Press chopped pistachios onto the salmon.

  5. Bake for 12-15 minutes or until the salmon is cooked through.

  6. Serve with extra lemon zest for garnish.
