  • 2 lbs beef chuck (shoulder)

  • 1 carton beef broth

  • 1 small onion, chopped

  • 2-3 carrots, peeled and sliced

  • 6 small white potatoes, halved

  • 3 garlic cloves, minced

For seasoning the beef

  • 1 tbsp salt

  • 1 tsp black pepper

  • 1 tsp adobo seasoning

  • 1 tsp paprika

  • 3 sprigs fresh thyme

For seasoning the gravy

  • 1 tbsp garlic salt

Preparation

  1. Season the Beef: Season the beef chuck with salt, pepper, adobo seasoning, and paprika. Rub the seasonings into the meat and let it rest for 10 minutes.

  2. Sear the Beef: Heat a skillet over medium-high heat and add a little oil. Sear the seasoned beef chuck on all sides for 2-3 minutes until a nice crust forms. This step locks in flavor and enhances the taste of the final dish.

  3. Assemble in the Slow Cooker: Transfer the seared beef to the slow cooker. Add chopped onion, carrots, potatoes, and minced garlic. Pour the beef broth over the top and add thyme sprigs.

  4. Slow Cook: Set the slow cooker on low and cook for 8 hours or on high for 4 hours, until the meat is fork-tender.

  5. Pressure Cooker Option: If using a pressure cooker, place all ingredients in the pot. Select the meat/stew setting and set the timer for 35 minutes. Let the pressure release naturally for 10 minutes before quick releasing any remaining pressure.

  6. Thicken the Gravy: After cooking, remove the beef and vegetables. Add 1 tbsp of garlic salt to the remaining broth and simmer on the stovetop for 5-10 minutes, or until the gravy thickens. Serve with the beef and veggies. Enjoy!
